Let the festive season begin

Food creator Louise has prepared the most incredible gnocchi. A festive meal doesn't need to take a long time to cook, and this dish is a great example of that. Gather your loved ones around the dining table and kickstart the season with this amazing recipe, you will love it!

Louise Laurenius gnocchi

RECIPE: GNOCCHI WITH PANCETTA AND PISTACHIO SAUCE FOR TWO

400 g gnocchi

100 g pancetta

1 garlic clove

100 g pistachio nuts

20 basil leaves

3 tbsp cream cheese

1 tbsp cold water

Salt & freshly ground black pepper

INSTRUCTIONS

Slice the pancetta into approximately 0.5 cm wide strips.

Fry the pancetta until crispy in a dry pan, together with a whole garlic clove lightly crushed with the edge of a knife.

Bring water to a boil for the gnocchi.

Peel the pistachio nuts and place them in a food processor along with the basil. (Save some pistachio nuts for garnish). Blend until you have a fine crumb. Add the cream cheese and water and blend until you have a creamy sauce.

Cook the gnocchi until they float to the surface (approximately 2-3 minutes).

Place the pistachio cream in the pan with the pancetta. Add some of the water from the gnocchi and stir.

Lift the cooked gnocchi out of the water using a slotted spoon and place them in the pan. Stir to coat all the gnocchi with the sauce. Add more water if needed. Season with salt and black pepper.

Serve the gnocchi in two deep plates. Top with black pepper, finely chopped pistachio nuts, and basil.
