Ricotta with Nuts and Figs
Louise Laurenius loves to inspire with delicious and simple recipes during the Christmas season. Here's an example of a whipped ricotta, topped with extra everything! Your guests will definitely love it.
RECIPE: WHIPPED RICOTTA WITH NUTS & FIGS
250 g ricotta
Zest of 1 lemon
1 tsp liquid honey
A pinch of flake salt
0.5 dl pine nuts
0.5 dl dried figs
0.5 dl shelled pistachios
Crackers for serving
Pour the ricotta, lemon zest, honey, salt, and pepper into a bowl.
Whisk with a balloon whisk until the ricotta becomes fluffy.
Toast the pine nuts in a dry pan until golden.
Cut the figs into smaller pieces.
Place the whipped ricotta on a plate. Top with pine nuts, figs, and pistachios.
Drizzle with olive oil and balsamic vinegar.
Finally, sprinkle some dried thyme over it.
Serve with crackers of your choice.
