EASY TO TAKE ON THE GO
Food creator Louise Laurenius offers a colourful and flavourful meal box with ramen soup. Packed with nutrition - perfect to bring to the lunch table at work or school, how does that sound?
RECIPE: RAMEN SOUP FOR 1
2 tbsp light miso paste
2 tsp soy sauce
1 tsp sesame oil
1 pinch of flaky salt
2 cm ginger, peeled
1 garlic clove
1-2 carrots
1 piece of red cabbage
5-6 sugar snap peas
1-2 spring onions/scallions
1 handful of spinach Sprouts
1 packet of rice noodles Coriander & Sesame seeds for topping
INSTRUCTIONS
Mix miso paste, soy sauce, sesame oil, flaky salt, grated ginger, and grated garlic in a bowl. Pour into the bottom of a lunchbox/glass jar.
Peel and coarsely grate the carrots. Thinly slice the red cabbage. Cut the sugar snap peas into smaller pieces. Slice the spring onions. Layer the carrots, red cabbage, sugar snap peas, spinach, sprouts, and spring onions in the lunchbox. Finish with the rice noodles. Screw on the lid and store in the fridge until it's time to eat.
Boil water in a kettle. Pour water into the lunchbox to cover all the vegetables and noodles. Put on the lid and let it sit for 3-4 minutes. Stir so that the miso mixes with the water.
Either serve in a deep plate or eat directly from the lunchbox. Optionally top with coriander and sesame seeds. Buon appetito!
